Ruby Glazed captures that moment with a vibrant composition of luscious raspberry and refined spices.
It opens with the bright zest of freshly grated lemon. Pink pepper brings a delicate sparkle of spice, while star anise adds a cool, subtly sweet nuance that gently awakens the senses and prepares the palate for what follows.
At its heart lies a slow-reduced raspberry coulis. The freshness of ripe berries remains, but their sweetness and richness become beautifully concentrated. A metallic accord evokes the cool sheen of a polished silver plate, while orange blossom and candied almond soften the fruit with a smooth, elegant texture.
In the dry down, saffron lends a warm golden depth beneath the crimson fruit. Vanilla and amber wrap the skin with the glossy finish of a freshly glazed dessert, while soft woods bring balance, leaving a warm and refined trail.
